  • 3 cups freshly squeezed orange juice
  • 2 cups sugar

INSTRUCTIONS

  1. Preheat your oven to 350°F and lightly brush a 9 x 13-inch baking pan with olive oil.
  2. In a large bowl, combine eggs, olive oil, and sugar. Using an electric mixer, beat the mixture until well combined.
  3. Add yogurt, orange zest, and baking powder to the bowl, and continue beating until fully incorporated.
  4. Using your hands, crush the phyllo sheets and add them to the cake batter. Stir gently with a spatula until evenly distributed.
  5. Pour the batter into the prepared pan, spreading it out evenly.
  6. Bake the cake for 45 to 55 minutes, or until a knife inserted into the center comes out clean.
  7. While the cake is baking, prepare the syrup. In a medium saucepan, combine orange juice and sugar. Bring to a boil, then reduce the heat to medium and simmer for 20 minutes, stirring occasionally, until the syrup thickens to the consistency of maple syrup. Allow the syrup to cool.
  8. Once the cake is baked, remove it from the oven and let it cool in the pan for a few minutes.
  9. Slice the cake into 20 pieces and let it cool completely.
  10. Once both the cake and syrup have cooled, pour the syrup over the cake, allowing it to be absorbed.
  11. Serve and enjoy the delicious Greek orange cake!
